Limited Edition - ZOO Series This 2007 Cabernet Sauvignon is an "Elegant Over Achiever” from a cool Vintage. If we go back and remember the 2007 season, we had a late bud break and a hot quick ripening season. This brought a beautiful signature of pure varietal character to this wine. I find that time developed wonderful scents of olive - almost like a tapenade. The barrel aging created a lovely length of layered fruit and balance. The tannins are soft and smooth making for a luxurious middle palate. As the wine finishes, the barrel shows its work, having tamed the fruit and presenting a firmness of oak tannin and grace. On this journey, patience was rewarded. 25% of the purchase price for this limited edition will benefit Conservation Ambassadors in Paso Robles.
