This dessert wine is made using a process called cryoextraction. In simple terms the fresh apple juice is frozen, then slowly allowed to thaw. Only the first portion of what thaws is used to make this wine. This portion is highly concentrated in both flavor and sugar. This intense apple flavor is carried over into the finished product.
