Grown in the Lake Erie AVA
Bone dry at less than 1 g/L residual sweetness. Small lot fermentations of destemmed Cabernet Franc, Pinot Noir, and Regent in stainless steel vats. Twelve to fourteen day macerations. Clarified by gravity before being blended and bottled un-fined and unfiltered within months of harvest. Serve chilled or decanted for one hour depending on how you are pairing.
