TX Cuvée Wild Ferment is part of our TX Cuvée series highlighting Texas grown apples. We hand pressed Arkansas Black, Winesap, and Cortland apples from the High Plains for this iteration, pressing on a cold morning in the winter of 2020/21. Then we just let the juice go wild! Yeast are all around us - on the apples, on every surface, in the air. Under the right conditions (cold and slow), a wild fermentation can produce surprising notes, a chorus of microbes adding to the ferment's characteristics. A portion of the cider was aged for the last two years in Chardonnay barrels. The result here is a beautiful blend of lychee, vanilla, and vetiver with a hint of good funk.
