The Stevenot Winery Reserva Chardonnay is the result of careful selection of perfectly ripe grapes, which were crushed and pressed to a stainless steel tank for settling and inoculation with yeast. Once fermentation began, the fermenting juice was racked to French and American oak barrels for “barrel fermentation” that took two weeks to complete. The wine aged on the yeast, or “lees”, for ten months prior to racking and bottling. This wine has pineapple, apple, and honey notes combined with a subtle oak finish from the barrel fermentation. Our Sierra Foothill Chardonnay will age for three to four years and will go very well with many grilled seafood dishes.
