Our Star Thistle Mead is our best attempt to pay homage to our beekeepers and all the work they do to provide us with such great honey to work with. We use the highest quality local honey supplied by Sleeping Bear Farms to produce a dry-med dry still mead to help showcase the potential of our northern Michigan honey terroir.
In the winter months the bees at Sleeping Bear Farms take a much needed break from the cold to hang out in the swamps of Northwestern Florida. Here, along the Apalachicola River the bees pollinate the local Sugar gum trees - which in turn produce the world famous Tupelo Honey that we use to make this one of a kind mead.
Raspberries + Honey = Delicious. Our first batch of Razzmatazz was produced when we had a batch of raspberry crème come out too watery at Sleeping Bear Farms. Instead of worrying we decided to add a bit more water and ferment it. The resulting product was pretty darn good. Good enough in fact that it led to the establishment of St Ambrose Cellars.
