Pinot Gris grown organically by our friends at Vitae Springs Vineyard. This site means a lot to us as it was the first fruit Spumoni ever purchased. 2021 was a magical year at Vitae, with the fruit coming off the vines tasting like fresh melons. We kept it simple, direct pressing straight into neutral oak and aging on lees for 10 months.

An equal part of apples (sourced from 100 year old heritage apple trees) & grapes (from an abandoned and dry-farmed vineyard in central Oregon). Each lot was fermented separately then combined in a single neutral oak barrel for 6 months.
