Aromas of honeycrisp apple, pineapple, and
overripe mango awaken the senses. Flavors of
lychee, fresh apricot, honeycomb, and a zip of key
lime dance across the palate. A nutty dryness
lingers on the finish.
WINEGROWING
Grown with a focus on sustainability. These
grapes are farmed on alluvial soils mixed with
larger volcanic strata. A properly managed,
umbrella like canopy allows for just the right air
flow and dappled sunlight on to the clusters to
achieve maximum quality. The soils of the
vineyard site enhances the expression of
character for each variety and lends to the
uniqueness of the wine.
WINEMAKING
A rare twist on a classic Rhone blend with the
addition of Chardonnay. Chardonnay was
pressed whole cluster into stainless steel and the
malo-lactic fermentation was blocked. Viognier
was picked early to add fruitiness and acidity.
58% of the Roussanne was fermented in stainless
steel. 3% of the Roussanne was barrel fermented
and aged in neutral french oak. Minimal sulfites
added at bottling.
