TASTING NOTES
A full bodied, robust red with blackberry fruit and generous, silky tannins on the palate. Perfumed notes of cedar, dried herbs, and violet lace the bouquet. 30 days extended maceration on the skins was employed to soften the tannins, and add a smooth, unexpected complexity. Often blended as a supporting varietal, it is quickly becoming a standout for New World wineries.
WINEGROWING
Grown with a focus on sustainability. These grapes are farmed on nutrient rich soils, made up of a decomposed ancient sea bed. A properly managed, umbrella like canopy allows for just the right air flow and dappled sunlight onto the clusters to achieve maximum quality. The higher water holding capacity of these soils allow for fewer water applications throughout the season, and lends to the uniqueness of the wine.
WINEMAKING
100% destemmed for open top fermentation and left on the skins for an extended maceration. Malolactic fermentation and aging were conducted with the addition of 25% new American oak and 25% new French oak. Racked only twice, and never filtered. Minimal sulfites were added at bottling.
