VINEYARD Savage Block GRAPE VARIETIES 75% Malbec 25% Petit Verdot ABV 14.3% TASTING NOTES Malbec exhibits intensely deep black and blue fruit flavors complimented with the spiciness to match. Whole cluster Petit Verdot was added in a year where we were lucky to have anything at all. The character of the American Heavy Toast Oak barrel contributed to the wine, and the flavors mellowed smoothly in unison. A structured and full bodied blend full of rich concentrated flavors. Velvety, encompassing tannins accompany a clove spice and jammy bouquet. These unique barrels impart flavors of caramel, spice, and roasted coffee with hints of vanilla and butterscotch. WINEGROWING Grown with a focus on sustainability. These grapes are farmed on alluvial soils mixed with larger volcanic strata. A properly managed, umbrella like canopy allows for just the right air flow and dappled sunlight onto the clusters to achieve maximum quality. The soils of the vineyard site enhances the expression of character for each variety and lends to the uniqueness of the wine. WINEMAKING Malbec grapes were hand sorted, then destemmed for open top fermentation in T bins. Petit Verdot grapes were added to the Malbec must whole cluster for a co-fermentation. Pump overs were used to douse the cap until workable. Daily punch downs followed until pressing. Malolactic fermentation was carried out in new American heavy toast oak barrels. Unfiltered. Minimal sulfites added at bottling
