Technically a Wickson single varietal, Second Chance is another step in our journey toward cider as wine. After fermenting to dryness, we allowed the cider to undergo a secondary malolactic fermentation. This softened the acid in the cider, moving the profile from sharp and assertive to mellow and balanced. Bottled still (uncarbonated) and brilliantly clear with a subtle chartreuse hue, Second Chance gives really strong Pinot Grigio vibes in flavor and aroma. Try it and tell us cider isn't wine.
