Dark Moon is another in our pommeau line (port-style fortified apple wine). In this product, we do a light fermentation on VA Hewe's Crab apples before adding eau de vie (un-aged brandy) distilled from our Dry River Reserve to increase the alcohol percentage above the fermentation tolerance. This arrests fermentation, leaving a naturally sweet yet high alcohol and stable mixture. We then age this mixture in freshly-dumped rum barrels from Vitae Spirits in Charlottesville for a minimum of 24 months. The result is a wonderfully complex fortified dessert apple wine. Rich and complex with notes of black cherry, vanilla, leather, toasted sugar, & red apple skin, Dark Moon Pommeau showcases one of the best cider apples Virginia has to offer: Hewe's Crab. Dee p and Dark from 24 months in rum barrels, Dark Moon is the perfect winter warmer. VA Hewe's Crab apples bring a beautiful balance of acidity, body, and texture not found in many other varietals.
