Golden Delicious is truly the base of this blend as both VA Gold and Gold Rush were developed as crosses between Golden Delicious and other apple varieties.

The latest in our Age Old Apples series showcasing heirloom apple varieties, Dabinett has the astringency and body of a Cabernet Sauvignon with the flavor and aroma of a rich, honeyed apple. Being a bittersweet apple variety, it lacks the acidic zing characteristic of many of our single-varietal ciders and instead boasts a smooth, tannic, and floral character with notes of flower petal, honey, pear skin, and vanilla.

Made from a blend of Gold Rush & Granny Smith apples & fortified with Dry River Reserve apple brandy, Long Light is the quintessential summer dessert cider. Fragrant notes of green & golden apples marry beautifully with the natural sugars & apple brandy to create a strong, sweet, & delicate cider. The appearance is reminiscent of a sun-washed summer afternoon with its light color.
Drink moderately chilled & pair with sweet treats for a decadent dessert or with strong, hearty meats & cheeses for an indulgent meal.
Long Light is an excellent cocktail addition, contributing apple flavor, natural but abundant sugar, & brandy booziness. Mix with tonic, lemon, & fennel with a sage garnish for a spritzy summer cocktail.

Long Night is our winter pommeau (port-style fortified apple wine). We do a light fermentation on a blend of Harrison and Dabinett apples before adding eau de vie (un-aged brandy) distilled from our Dry River Reserve to increase the alcohol percentage above the fermentation tolerance. This arrests fermentation, leaving a naturally sweet yet high alcohol and stable mixture. We then age this mixture in freshly-dumped bourbon barrels from A Smith Bowman in Fredericksburg for a minimum of 12 months. The result is a wonderfully complex fortified dessert apple wine.
Strong notes of stewed apple, butterscotch, caramel, vanilla, berry, and brandy on the nose and palate with a natural assertive sweetness, balanced tannin, and warming alcohol.
