APPLE TYPE:
Bittersweet, (Med to Full) (Blender & Keever).
ORIGIN:
France, Parisis-Fontaines Berthecourt (Oise), 1848.
PURPOSE:
This single-varietal cider was made with limited intervention, so only the apple’s true flavor (not necessarily a pleasing one) is present for special compound evaluation. By tasting the cider and using the Post-Fermentation Flavor Graph one can recognize if this apple or apple type would be good to use as a single varietal cider, and/or can be used as a blender to fix problematic ciders. For a Good flavor baseline, the graph has a red box to help show flavors that are too high or too low. Apples were grown in the cool Maritime PNW area of Washington State by the cidermaker.
