This dry cider has notes of anise, pear, beeswax, and mineral. Cidermaking Notes: apples hand-picked, sweated and pressed September and October 2023. Juice was then fermented to dry in stainless steel tank and oak barrels. Blended and force carbonated. Bottled from brite tank beginning January 2024. made from these apples: Ellis Bitter, Brown's Apple, Somerset Redstreak, Rhode Island Greening, Bedan, Baldwin, Binet Rouge, Muscadet de Dieppe, Rubinette, Bulmer's Norman, Yarlington Mill, Liberty, Major, Dolgo Crab, Dabinett, Brown Snout, Tremlett's Bitter, Kingston Black, Stoke Red and more.
