Paradiso is a rose made using a technique that the French call Pet Nat and Italians call Col Fondo. This is a naturally effervescent, completely dry wine with soft frizzante style bubbles. By using this technique and Sangiovese as the grape it creates an incredibly soft and aromatic wine that refreshes. The technique Col Fondo translates from the Italian as "on the bottom". This means that yeast sediment is still on the bottom of the bottle and the wine should never be completely poured out. However I do recommend to give the bottle a nice shake up and down prior to opening to integrate the wine just before pouring as it substantially enhances the flavor. For those of you wondering if you rink some of the yeast accidentally it is totally safe and harmless.
