Made by re-fermenting Chardonnay pomace, this naturally lively wine undergoes a third fermentation, creating bright carbonation that lifts aromas of lemon drop, brioche, green apple, and citrus peel. Fun, fresh, and effervescent with vibrant acidity. Pairs well with shellfish, seafood, and light poultry dishes like roast chicken with herbs, chicken salad with grapes and walnuts, or turkey breast with lemon-thyme butter. Also excellent with soft cheeses such as brie or goat, fresh salads as well as snacks like mini quiches, truffle fries, and croquettes.
