This is the 2018, Third Reserve Batch of Oaky Dody. After primary fermentation, the cider is racked into freshly dumped Kentucky Bourbon Barrels where the unique flavor of the Bourbon is added to the cider. Prior to bottling, the cider is aged for a number of months to allow the higher alcohol content to mellow. Awards: 2018 GLINTCAP Bronze Medalist 2018 Northeast Gold Cider & Perry Competition Bronze Medalist Tasting Notes: Oaky Dody is a still, dry cider with a complex flavor. Apple flavor is subtle beneath the bourbon and oak overtones. Light caramel undertones come from the bourbon and maple.

Patriots' Cider is the Fifth Reserve Batch in the Oak Spirits Collection. This is a truly Colonial cider made from fresh apples and maple syrup and aged in freshly dumped Caribbean Rum Barrels. The Rum flavor is more subtle than the other varieties of bourbon and scotch barrels, but blends well with apple flavor of the base cider. This cider has a slightly higher acid content and a more full flavor from the tannin in the Harry Masters Jersey apples. Awards: 2018 GLINTCAP Bronze Medalist 2018 Northeast Gold Cider & Perry Competition Bronze Medalist Tasting Notes: Patriots' Cider with Maple has a subtle Rum flavor blended with a more flavorful apple tart. Light carmel undertones come from the maple addition.

The Disturbance is a combination of a 20% wild ferment and an 80% inoculated ferment. The result is a natural cider with a seriously sour presentation not unlike a tart lemonade. The majority of the cider was inoculated with Monastery Ale yeast and blended with a wild fermented Golden Russet/Ashmead Kernel blend. The resulting cider is in the Spanish style that is smooth, yet tart in mouthfeel. On the palate, Gin makes the first impression followed by caramel and toffee and finishing with black pepper and a hint of juniper.

This cider begs the drinker to enjoy a fine cigar alongside the ice cold mug of refreshment. The blend of apple, maple syrup and the overtones of the Irish Whiskey has produced a unique cider/wine that has become a new favorite of our fans. Tasting Notes: St. Paddy's Delay has a very complex flavor on the palette. The aroma presents caramel and light spice. The whiskey flavor presents up front with a flush of ripe green melon and a finish of toasted oak. You will find yourself identifying interesting and unique flavors with each supplemental sip.

Coureur de Bois (pronounced: koo-ree-er duh bwah) is the Eighth Reserve Batch in our OAK SPIRITS COLLECTION. This cider/wine has been aged for over a year, and placed in an imported 500 Liter Puncheon that previously held premier French Cognac. The flavor of the Cognac overtones fully engulf the apples and maple syrup with complimentary blending. A must try - this is one of our best to date. Tasting Notes: Coureur de Bois is a still, dry cider that tastes like sipping brandy, but drinks like a cider. With an aroma of a caramel apple, the initial taste carries hints of jasmine, iris and passion fruit with an earthy, cigar box finish. You will be surprised that hard cider can taste like this!
