Our tribute to single varietal wines: one bottle each of Brij Grenache, Syrah, and Mourvèdre.
Grenache: AVA: San Luis Obispo Coast Vinification: Fermented 100% whole cluster in open top wooden cask. Pressed to stainless steel and aged in 2000L neutral oak foudre. Bottles produced: 2,400 ABV: 13.5% Harvested: 10/09/23 Bottled by hand: 06/03/24
Syrah: AVA: San Luis Obispo Coast Vineyard: Rancho Arroyo Grande Vineyard Vinification: 100% whole cluster two week maceration in open top wooden cask. Aged in neutral barrels. Bottles produced: 280 ABV:12.5% Harvested: 09/09/22 Bottled by hand: 02/09/24
Mourvèdre AVA: Lime Kiln Valley Vinification: Foot stomped and fermented 100% whole cluster in open top wooden cask and stainless steel. Aged in 2000L neutral foudre. Bottles produced: 2,500 ABV: 13% Harvested: 10/11/23 Bottled by hand: 07/01/24
Winemaking: All wines are made with natural yeast. The Brij, Phelan Farm, and Stolo wines do not see any sulfur (in the vineyard or cellar). All the wines are aged in older oak barrels of all sizes. The wines are hand-bottled without any fining or filtration.
