Sangiovese is the dominant red wine grape of Italy. Used for wines that spend years in the barrel and decades in the bottle and for simple everyday wines that never see the inside of a barrel or a bottle. We are straddling the middle ground with no barrels but time in a bottle, and we use really good estate-grown grapes. If you have onion, garlic, and tomato in the dish, this should be a great wine and food pairing. Our vineyard produces Sangiovese with cherry aromatics and a hint of Grains of Paradise in the finish. We time the harvest to get ripe flavors without losing the acidity to balance spaghetti marinara, taco de lengua, red beans and dirty rice, or a burger.
Our beautiful arid Rattlesnake Hills climate allows us to grow wine without the use of insecticides or fungicides. Our vineyards are wholistically managed to create an optimal environment for vines. We hand-harvest every berry to ensure only ripe, sound fruit goes to the crusher.
Ingredients: hand-picked sustainably grown organic grapes, yeast, potassium metabisulfite, oak chips, malolactic culture.
We also used blood, sweat, tears, love, and laughter in the growing, elevating, and bottling.
