Petillant naturel, or Pet-Nat, is an ancient method of making sparkling wine where the wine is bottled early, before it has finished its first fermentation. Once bottled, the fermentation continues until very little natural sugar remains, creating a sparkling, unfiltered, dry but fruity wine with crisp acidity. Its aromas are reminiscent of harvest-time when fresh juice is squeezed from the grapes as the leaves fall and cooler air settles in. Our 2022 Itasca Pet-Nat is made from the juice of lightly pressed Itasca grapes grown by Cedarberry Vineyard just over the river in Prescott, Wisconsin. Enjoy it with creamy cheese or fresh seafood.
