Dark ruby garnet with a touch of purple in color. The scent of dark cherries, black currants, dark chocolate, and black peppercorns rise out of the glass.
On tasting, the wine is full bodied, with medium tannins and mouthwatering acidity, and the dark fruit flavors shine through to a medium long finish, with notes of spices and graphite in the background. This wine will pair well with richly flavored red meats like beef, bison, lamb, salami, but also duck and pepper crusted ahi tuna. It would also go well with mild-to-moderate flavored cheeses, for example cheddar, gouda, and chevre, and pastas with tomato sauce, and even chocolate.
This cabernet is 4 years from harvest and is ready to drink now, but may be held for a couple more years.
