Tasting Notes: The 2021 Petite Pearl is a garnet colored wine, almost opaque from the depth of color. The nose exhibits dark fruits, vanilla, and lilac alongside some slight minerality. On the palate strong jammy flavors of a variety of small fruits such as currants, cherries, and raspberries are complemented by vanilla, oak, and earthy richness. An initially creamy mouthfeel transitions into a tart and tannic aftertaste that leaves you wanting another sip. This wine is Certified Organic by (VOF) Vermont Organic Farmers.
Petite Pearl should be served at cellar temperature, 55° and may need some time to breathe (10-15 minutes in the glass). Because there are no sulfites added I protect the wine from oxidation by limiting exposure to oxygen. Since there is very little oxygen introduced during fermentation and aging it needs a little bit of air to really open up. Once the bottle is open it should be consumed within 24 hours. If you only want one glass blanket with an inert gas (argon, CO2, etc), re-cork, and refrigerate.
