These grapes are hand harvested at different times based on their ripeness. Sorting is done in the field to remove unripe fruit and any foreign materials that could possibly affect the wine. In the winery we whole cluster press the grapes, then move the juice into stainless steel tanks so that we can control the temperatures to about 50° F. After letting the wines settle we begin cold fermentation which lasts for about 30 days. The individual wines are blended just before bottling.
