Look: Medium garnet color Aromas: Aromas of dark cherry Taste: Flavors of dark cherry and black raspberry These grapes are hand harvested and sorted in the field to remove unripe fruit and any foreign materials that could possibly affect the wine. In the winery we de-stem the grapes from the cluster and do a final hand sorting to ensure that only the best grapes are left for processing. These grapes are then put into a tank and left to “cold soak” at about 42°F for about two days before we begin fermentation.

Notes

Aged in both American and French oak barrels for 12 months, this red wine has a medium body and firm tannins at the front and mid-palate. Grilled beef, hearty pasta dishes, and soft cheeses pair well with this wine.
