This rosé wine is produced using the “direct press” method, meaning that the grapes are pressed immediately without letting the juice draw out any significant color from the skins. The grapes are whole cluster pressed, and the juice is then transferred into stainless steel tanks so that we can control the temperatures to about 50° F. After letting the wines settle we begin cold fermentation which lasts for about 30 days.
