Notes

These grapes are hand harvested and sorted in the field to remove unripe fruit and any foreign materials that could possibly affect the wine. In the winery we de-stem the grapes from the cluster and do a final hand sorting to ensure that only the best grapes are left for processing. These grapes are then put into a tank and left to “cold soak” at about 42°F for about two days before we begin fermentation.
