Every month winemaker, Matthew VIllard, tastes through all the different lots and barrels and every month there's always 2 or 3 lots and 2 or 3 barrels that really stand out. Over the course of 15 months, the wine evolves and ages in the barrels showing different character. Each barrel is a little different, even within the same lot. The I is the wine straight from his favorite barrel after all that time, without any blending. He racked 30 gallons into a half barrel before creating our unique blends and kept it for 3 months in that 30 gal barrel before bottling it. At 30 gallons we only get 12 cases of finished wine so it is very limited.
