This accidental mead was made when a batch started spontaneous fermentation. Thinking the batch was a loss we threw in some wild fermented avocado blossom honey and saison yeast to see where it went. Look for flavors reminiscent of a dunkel with big notes of banana, toffee molasses, and a funky aftertaste. While trying to come up with a name, our Chief Honey Taster yelled a phrase that fit perfectly . Finishes off-dry and effervescent (<2 Vol). Pair it with barbeque, steak, or stew.
