Just for fun, we used the same apple blend as last quarters Lafayette but skipped the keeving process, fermenting to fully dry. Floral and bittersweet apple aromas lead ripe/baked pear, creamy custard, white grape and spice flavors. Four-month wild yeast ferment; ten-month bottle condition; each bottle individually hand-disgorged. 30% Muscadet Dieppe; 30% Michelin; 20% Dabinett; 20% Fillabarrel.
