Pétillant Naturel, or Pet Nat for short, is a naturally fermented sparkling wine that's bottled before fermentation is complete. It continues to ferment in the bottle, giving it an effervescence and complexity that's almost impossible to duplicate. This natural wine is made with 100% Riesling from the Niagara Escarpment AVA and was fermented with indigenous yeast. It spent three years on the lees and was hand disgorged. After that long journey, it's finally ready to be in your glass. Only 80 cases were made, so be sure to get your hands on some while you still can! Cheers!
