2023 Manton Blend

With a striking view of Mt. Lassen, the historic orchards of Manton are in many ways an ideal location. Unfortunately, commercial apple production in the area all but died out decades ago. Luckily, I found Mitch Shandley, who is not only keeping a historic orchard alive, but planted some great varieties that lend themselves well to cider. This blend is heavy on Golden Russet, along with Winter Banana, Harrison, and Hudson's Golden Gem. Fermented fully dry with native yeasts and aged in neutral red wine barrels for 10 months. Bottle conditioned.

This artisanal cider is made from a blend of dozens of different cider varieties sustainably grown by Pleasant Valley Cider Apples in the Willamette Valley along the banks of the South Fork of the Santiam River. The melange includes many various tannic English and French bittersweet and bittersharp varieties along with aromatic American heirlooms, red fleshed, and crab apples. The apples were pressed during the harvest season and barrel fermented with native yeasts and bottle conditioned.

Pressed in season, native fermentation in neutral French oak red wine barrels, and bottle conditioned.

We start by harvesting apples at the peak of ripeness from the California Cascade and Sierra Foothill regions near our home in Chico. American heirloom varieties that have a rich tradition in cidermaking are used- King David, Arkansas Black, and Winesap along with Golden Delicious. Harry Master's Jersey and Yarlington Mill, English bittersweet cider apples, add some soft tannins to the blend. The fresh pressed juice is fermented in neutral red wine barrels. Native fermentation, bottle conditioned, unsulfited, unfiltered, unpasteurized.

Sierra Beauty was a seedling apple discovered in the foothills above Oroville and was propagated by Bidwell's nursery in Chico. The Wickson was developed by Albert Etter, a renowned Humboldt County apple breeder. The Pressed in season, native fermentation in neutral red wine barrels, and bottle conditioned. No sulfites, unfiltered, unpasteurized.
