This blend of Cabernet Sauvignon, Merlot and Petit Verdot exhibits pleasurable aromas of blueberries, blackberries, black currant, roasted coffee, black licorice and lilac. A taste reveals additional flavors of red plum, black cherry and cedar. It’s well structured with soft tannins that allow it to stand on its own or go with food. The wine should easily age for ten years or more. The Cabernet Sauvignon, Merlot and Petit Verdot grapes were separately harvested in the cool, early morning and separately destemmed into fermentation bins. The fermentations were punched down twice a day. Upon completion of fermentation, the wines were pressed and immediately put in French oak barrels (40% new) for aging. The wines were topped monthly and racked once during 16 months of aging. The final blend was 44% Cabernet Sauvignon, 44% Merlot and 12% Petit Verdot. Sonoma Valley, also known as The Valley of the Moon, is the name of the region and the name of the AVA. The climate is relatively mild making it a rare region that can support cool weather Pinot Noir and warmer weather Cabernet Sauvignon. The Sonoma mountains to the west provide protection from excessive rainfall. Valley openings to the north and south allow cool air to flow from the San Pablo Bay and Pacific Ocean.
