6 Bottle Limit A Port Style Dessert Wine 375 ml Bottle This release is the fourth step in our journey of an old-world style of “port” made using the Solera method. Although we cannot call it Port per the Government regulations because in 2005, the EU and US reached a bilateral accord to end a round of negotiations that had lasted twenty years. One of the significant parts of the agreement was that American wines could no longer use place names such as Champagne, Chianti, or Port on new wine labels unless you were commercially using them prior to that date. The "Solera" style process is when we combine the past vintages ageing in barrels with the current vintage. We take just enough to bottle the current year and leave the remaining to continue to age with more air space or "ullage" in the barrel which accelerates the oxidative effects on the wine, slowly turning the "ruby" ports more "tawny". So, this release is a combination of 2017, 2018, 2019, 2020 and 2021 vintages. These vintages have been ageing in French and American oak. Next year will be a combination of 2017, 2018, 2019, 2020, 2021 and 2022. And so on. So, in 20 years, in every bottle will be 20 consecutive years blended into 1 bottle! - A time capsule!!! This rich, luxurious and complex wine is layered in aromas of figs, raisins, prunes, baked plums, mocha, baking spices and a hint of vanilla. The pallet is lavished with a velvety mouth-feel exploding with cooked fruit, cocoa, spices and hazelnut with a vein of acidity that runs through the finish. This wine is one that can age for decades if you have the willpower. if you do not finish this bottle in the same day, simply put the cork in and put in your refrigerator until next use. It will be very drinkable for 4-6 weeks after. Varietal: Cynthiana, Petit Verdot, Aglianico, and Chambourcin Number of Bottles Produced: 5,040
