Naturally sparkling and fully dry, this cuvee of Northern Spy offers bright acidity with a bouquet of baked apples, honeydew melon and lime zest. A wiff of French pastry harkens to its maturation in oak casks on its lees for nearly a year. Bottled in 2020 with dosage and left to rest, the cider is delicate, elevated and crisp.
