Notes

Winemakers Notes: Riesling can range from bone dry to some of the sweetest wine in the world. Ours falls into the “Off-Dry” region of the spectrum. Acidity and aromatics are the star of this wine. Riesling is one of the last grapes to ripen at our Stowe Vineyard and pick timing is a crucial part in creating the style of Riesling we are aiming for. We try to pick when the acids are still high, although not so high that a tremendous amount of residual sugar is needed to balance that acid. The result is a wine with beautiful aromatic character with mouth watering acidity that is extremely refreshing and balanced. Winemaking Notes: 100% Stowe Vineyard Riesling. The grapes were picked in the morning and promptly whole cluster pressed. The juice was settled for 20 hours, then racked to a fermentation tank where it was inoculated with yeast. The fermentation was slow and cool lasting 23 days at a temperature of 48-50F. Just before fermentation was complete the wine was super chilled to 28F to stop the fermentation and leave a slight amount of residual sugar. The wine was then cold stabilized for 1 month, clarified with bentonite clay, filtered, and bottled on 1/7/21
