Deep, dark honey is the start of this oak-aged, dry-style mead, two years in the making. Aged for 27 months using NC wildflower honey with strong buckwheat, molasses and sorghum notes, with 4 of those months aged on French oak staves inside our stainless tanks to accent the boldness of the honey with a bit of peaty, woody, and vanilla notes.
