Our first ever 0/0 wine! What is that? Well, the ingredients are grapes! We didn't add any sulfur nor did we filter or remove anything from the wine after making it. When you describe it like that it sounds like its less work when in reality making a great 0/0 wine is extremely challenging because you are relying solely on the grape quality as well as the attention to detail during the wine-making process to ensure that the grapes and wine are free from any contaminants that might spoil the wine. Without sounding too braggadocious, we nailed this wine many thanks to the incredible farming practices of Eden Rift Vineyard and their immaculate Pinot Gris we received in early September! After being hand-harvested these grapes were sorted by hand and loaded into an egg-shaped vessel for 21 days of carbonic maceration (just like they do in Beaujolais) before being pressed back into an egg to be settled then subsequently racked into the barrel. Then on November 14th, just in time for Third Thursday, we bottled this beautiful wine. We hope you enjoy it!
