Vinification: Regeneratively farmed Riesling (21 Brix) was cold-soaked whole cluster for five days and pressed into stainless steel tank where it completed primary fermentation. Subsequently organic Chenin blanc was harvested at 18 brix and destemmed and fermented on skins for 7 days before being pressed into a separate stainless tank where it completed primary fermentation. After racking both the Riesling and Chenin of their primary gross lees they were blended into one tank and racked into Flex Tank Eggs for maturation and elevate.

Grapes: Wente Clone 4 Chardonnay

Farming Practices: Organic

Vinification: These wente Clone Chardonnay grapes were organically farmed and harvested from Siletto Vineyard in the San Benito AVA. Harvested at 20.5 Brix and 2.0 g/L Malic acid these grapes were destemmed and fermented on skins for 7 days before being pressed into stainless where they finished primary and malolactic fermentation natively. The finished product had some minor Brettanomyces due to extended maceration on the skin, giving a fresh straw nose with some gameyness. Beer lovers will love this chardonnay.

Our second ever 0/0 wine! What is that? Well, the ingredients are grapes! We didn't add any sulfur nor did we filter or remove anything from the wine after making it. When you describe it like that it sounds like its less work when in reality making a great 0/0 wine is extremely challenging because you are relying solely on the grape quality as well as the attention to detail during the wine-making process to ensure that the grapes and wine are free from any contaminants that might spoil the wine. Without sounding too braggadocious, we nailed this wine many thanks to the incredible farming practices of Eden Rift Vineyard and their immaculate Pinot Gris we received in late September!

After being hand-harvested these grapes were sorted by hand and loaded into an egg-shaped vessel for 13 days of carbonic maceration (just like they do in Beaujolais) before being pressed back into eggs. Then on November 14th, just in time for Third Thursday, we bottled this beautiful wine.

From the Tres Pinos Creek Estate, veteran vigneron, and local legend Ron Siletto carefully farmed this elegant Cabernet Sauvignon to perfection. While other Cabs are densely oaked* and overwhelmed by big fruit, our Cab was fermented using native yeast* strains featuring an old-world style with minimal intervention*. The cooler climate of the San Benito AVA features softer fruit with refined tannins highlighted by the natural fermentation.

Also, it's a good idea to let this bottle rest a week or two before drinking after shipping. I know that sounds painful, but the shipping process is hard on wine and stirs everything which can create unwanted flavors.

Unfined* and unfiltered! Our chard is CLOUDY! But that's not a bad thing! Our Chardonnay is made using native yeast* and aged on lees* for 45 months in neutral oak topped up from carboys of the same wine! This is a super special wine with fantastic depth and exceptionally smooth.

If you haven't tried an unfiltered Chard, you are in for a treat. This is how Chardonnay was intended to be drunk. Without fining agents (unnatural animal products or chemicals.

WILD YEAST UNFINED UNFILTERED VEGAN PRACTICING ORGANIC SUB 50PPM SULFUR ADDED

This bottle of red wine is spectacular! Designed to be drunk slightly chilled (put it in your wine fridge or regular fridge and pull out 20 minutes before drinking) and enjoy by the beach! We took 3% of Trousseau grapes and fermented them with Pommard Pinot Noir clone for over 17 days on skins until fermented dry. Once fermented dry, we noticed we were missing a little character to match the boldness of the Pommard and Trousseau so we took some Ruché from the fermenter and added it in to give it a spectacular finish. This wine is wild! Wild fermentation no added yeast and only a bit of sulfur added post crush and right before bottling. Never racked and never filtered you will get a little bit of the yeast in the bottle that just adds to the excellent flavors of this wine!
