This is a mead for those who favor the Gothic traditions of meadmaking, yet favor a refined modern presentation. It is a full semi-sweet mead with heft and distinct honey sweetness of the palate. It is held by a blend of French and American oak chips and woven together with the resinous perfume of saffron. This mead is a natural with acidic, rich, and spicy foods like paella, avagolemno soup, and Cinghiale Agrodolce.
