The Melissae were a triad of divinatory Priestesses in ancient Greece, referred to as "Priestesses of the Honey Bee." The Melissae were keepers of bees, tenders of the land, and makers of mead.
Lemon Balm's real name is Melissa officinalis. Melissa means "bee" in Greek, referring to the delight bees have for the plant. We think you will agree with the bees! This sparkling mead is off-dry, light bodied & brightly acidic with citrus and herbaceous notes. Fresh harvested Melissa is from Footehill Farm in Colbert, WA.

A classic spiced apple mead with a few twists. A caramelized apple reduction adds toasty flavors usually associated with Belgian candi sugar which melds with star anise, nettle, clove, ginger, rooibos, elecampane root, chipotle, and cinnamon. 5.5% ABV. 500ML

Our hopped mead possesses two additions of three types of hops, which add balance to the sweetness of traditional honey wine with grounded base notes, and a sturdy aroma that entices the senses. Mosaic hops anchor a fruit-forward hop blend with guava, lime, and grapefruit flavors combined with the usual resinous hop flavor.

Pairing suggestions: Anything you would enjoy a beer with…pub menu, pesto, pizza, pasta & red sauces, pretzels & cheese sauce. Pho with lime and basil leaves. Focaccia bread, parmesan cheese.

Lavender Citrus Mead
Celebrating the joys of summer on Green Bluff, this metheglin uses culinary lavender grown 1.5 miles from our meadery at Fleur de Provence Lavender Farm. Light, bright, and floral this mead exhibits the faintest touch of sweetness which brings out floral lavender paired with two types of citrus zest. This mead is an excellent choice where a drier, lemony white would normally be preferred.

A light bodied, brightly acidic mead brings forward the citrus and herbaceous notes of lemon balm. Fresh harvested Melissa from Foothill Farm in Colbert, WA is layered over a standard infusion of dried leaves to produce a full-spectrum extraction of the plant’s flavors. A subtle addition, this mead is a natural over ice on a summer’s day.

Reishi mushrooms, local botanicals & Masala Chai at 6.5%, this carbonated mead is a special winter treat!

Drawing from the Balm of Gilead, this wine combines exotic Old World spice with the sensory memories of branches baking in the strengthening sun of spring in the Northwest. Additions of Poplar leaf buds & sun-dried vanilla bean give this off-dry metheglin a floral nose and sweet start with a warm, complex & lingering resinous finish.

(Chris-oh-pee-yuh), which is Greek for Gold-Making, is an alchemical term which refers to the transmutation of a substance into gold (from the Greek khruson, gold, and poiein, to make). The Chrysopoeia is a subtly sweet, light bodied off-dry mead with a creamy sweetness in the finish. There are notes of tart apples, green hay, vanilla, and butter that carry into a shorter finish with honey and butteriness predominant. Think of a
less acidic Riesling and you'll be in the right ballpark for pairing.

Pairing suggestions: Any goat cheeses, chèvre, feta, goat milk cheddar with peppered crackers or walnuts. Think Mediterranean: White fish or grilled chicken breast with fresh veggies. Pork is another possibility due to its light flavor and intrinsic sweetness. Culinary spices such as Greek Oregano, Basil, Thyme. This is a very accessible wine that does well at the dinner table. May also be used instead of white wine in white sauces or marinades.

Rose Cardamom Mead (off-dry)
Awards: Seattle Magazine called this product one of the top 5 meads in Washington in 2015.

This off-dry mead is infused with rose petals, fresh ground cardamom, and sun dried vanilla bean. This complex yet delicate blend of floral and spice notes is rounded with the smoothness of vanilla that will keep you guessing (and sipping)! Tasting choices will rely heavily on the nuanced balance of the floral notes-the citrusy rose, with the almost peppery but cool spice character of the cardamom.

Pairing suggestions: Fruits like apricots, those handy goat/sheep cheeses, potentially Gouda or a sharp cheddar, kalamata olives. Entrees: think anything curry. Thai curries, Indian curries like Tikka Masala.
Desserts to pair with Rose Cardamom, the sky is the limit. Dark chocolate, fresh fruit/berries with vanilla whipped cream, cardamom ice cream, scones or butter biscuits (Swedish/Norweigian desserts and baked goods which have cardamom in them also are suggested).

Matricaria Chamomile Mead (off-dry)

(Matt-rih-car-ee-ah) is a latin Genus of Old World flowering plants in the Asteraceae family. Matricaria recutita, or Chamomile, is the single herbal addition to this Metheglin. Nose reveals a distinctly amplified honey presence, with apple and hints of cinnamon and vanilla. The body is smooth with bittersweet floral taste, and crisp, clean finish. Matricaria is a complex concoction for the contemporary palate.
Two extraction methods offer enjoyers of this metheglin to experience a comprehensive taste profile, and a full appreciation for chamomile's tannic, bitter, and soft notes in palatable sequence.

Pairing suggestions: Enjoy with anything containing cinnamon or mulling spices. Carmelized pecans, almonds, or green salad with cranberries and pecans. Pulled pork, pasta salads, dishes with Apples or Pears such as apple pie, baked apples, fresh apples with Chèvre, or pear salad. Pairs beautifully with flan or cheesecake at dessert, or even a stand alone evening glass.
