This is a custom pepper mead made for The Erotics and their new CD! The mead name was taken from their song Blood of the Wasted. The mead is semi-dry and smoky with a spice level similar to medium salsa.
Coffee & cacao mead that is semi-dry but full of flavor. The coffee is balanced by a mild honey sweetness that highlights the subtle cacao. Made using coffee and cacao from Wired Coffee Roasters and Cacao Vita.
One of the wonderful products of the great Northeast is maple syrup. Harvested late winter/early spring is the sap of maple trees which is boiled down to create maple syrup, a trademark product of the area. We use only local maple syrup to produce our Maple. Oak aged with a strong but not too sweet maple flavor this mead will harken back to memories of tapping maple trees as a child and boiling down the sap you collected to make syrup. Our goal was to capture the essence of the smokey caramelized aromas in the sap house. It is as strong as Heritage at 16% ABV, which allows us to retain quite a bit of maple flavor without the cloying sweetness that one might expect to accompany such bold mapleness.
Our unparalleled dry mead. Zero residual sugar. Unoaked to allow the full flavor of the mead to take center stage. A lighter mead with a wonderful mouthfeel that has a spicy character and slight tannic quality. This is the simplest of meads, yet ours is very complex.
Sweet Feral is sweeter variety in the Feral line of mead. Another "traditional" mead of ours in that it only contains honey. The citrus front is balanced by the honey sugars, complimenting each other while leaving behind a smooth lingering floral aftertaste.
Our Staghorn Mead is the ultimate locavore mead. It is made from local raw honey and local wild harvested staghorn sumac. The sumac gives the mead a crisp, lemon-like refreshing balance to the honey. Sit back and siip on this most unique mead!
This is a light and crisp mead made with local raw honey and NY black currants. The flavor is reminiscent of a Riesling with its light and fruity characteristics.

Our most unique and ambitious creation... a mead made from wild yeast that we have captured and cultivated right at the Meadworks! The process of cultivating wild yeast is time-consuming and delicate, but the rewards are a mead that tastes unlike anything available.The flavor reflects the delicate process of creation. It has an initial smooth and slightly sweet honey flavor. At 13% ABV there is a hint of alcohol to compliment and enhance the honey flavor which gives way to an amazing array of fruity and floral essences imparted by the yeasts alone. We have used a more subtle oak for Feral, to provide a light contrast to the smooth honey.
