Although our Vaya Con Gato Sauvignon Blanc was fermented in stainless steel following methods generally associated with Sancerre, it is very much a new world Sauv. In fact, it reminds us of the Sauvignon Blancs that we enjoyed when we visited Argentina where we heard the locals refer to this varietal as "el gato." This wine is crisp on the pallet with a firm grassy aroma which makes it more characteristic of the Sauv Blancs produced in Mendoza or Marlborough than the Loire Valley. Those characteristics also qualify Vaya Con Gato as a suitable pairing partner for a dish like a spicy seafood paella or perhaps a grilled and buttered lobster.
