This 2018 Blanc de Blanc sparkling was made entirely from our single vineyard estate grown chardonnay. After tank fermentation and assemblage, the wine was bottle in the traditional French method. A unique liqueur de triage was added to kick start secondary fermentation, adding pressure and C02 bubbles slowly over a full two years. Finally after secondary fermentation is complete the wine was left to rest ‘sur lie’ for another full year. During this final stage the complexity of the wine builds adding the fresh aromas and crisp flavors of a fine sparkling wine.
