Estratto meaning: extracted or essence. We utilize a unique process of fermenting 100% estate grown Chambourcin grapes on the pomace (pressed off skins) of Petit Verdot, Cabernet Franc and Merlot. Doing so gives this wine depth, complexity, and deep lush tannins. Estratto spent 18 months in new and neutral oak and will benefit from additional ageing. This wine pairs well with barbecue beef ribs, steaks, smoked and hard cheeses.
