2022 LEHUA

Lehua is a traditional mead featuring Lehua blossom honey from Hawaii along with French oak. Lehua blossoms are among the first to show up in the Spring; they are nurtured by the tropical rain and sunshine and are indigenous to a relatively small part of the planet. This honey brought in from the big island of Oahu. The resultant wine is almost colorless, optically perfect and features flavors of Honeycrisp apple, fresh melon, stone fruit, and some floral vibes. The Meadery has received a lot of recognition in the past two years for our traditional meads. I feel like this one is certainly as good as those award winners.

2023 MIMIR

Mimir is made in collaboration with @mythkbrew out of Orlando. Mike‘s beers are all sort of rooted in mythology so we wanted to keep with a more traditional old school theme. Mimir is made with some amazing orange blossom honey from Mexico. Just oozing citrusy goodness. We then added a blend of burgundy rooibos tea imported from South Africa, lavender imported from Provence, France plus rose hips, rose petals, ground elderberry skins plus some ground currant skins. Not an inexpensive endeavor; but, so worth it. We haven’t done the metheglin thing in a while. This one is positively smashing. So good. Optically perfect. Dark gold in color with a slight pink hue. On the nose I get citrusy, floral aromas. It’s really impressive. Flavors of citrus, guava, florals, and berries. It’s so complex and yet remarkably delicate/easy to drink. I’m convinced that if presented blind many would think it’s a fruity melomel.

2023 Final Act

“Final Act” is a mixed fruit melomel featuring a blend of Bramble berries. For those not hip to the lingo, those are berries that generally look like raspberries ie appear in clusters. For this particular product, we used a blend of boysenberries, black mulberries, raspberries, and blackberries. We then gently aged it on a bit of French Oak. I believe this product to be amongst the best we have produced in our six years of operation. It hits all the marks in terms of color, clarity, aroma, flavor, and mouthfeel. I’m incredibly pleased with how it turned out. I think you will be too.

A mead made with the juice of over 1,000lbs of Turkish pomegranates, domestically sourced blackberries and finished with Vietnamese Ceylon Cinnamon. Aged for nearly two years in the Owners Group privately selected Amburana Bourbon from Old Elk. After 21 months in the wood it emerges more pomegranate forward with the cinnamon toned down a bit. It also comes with a lofty 17.5% ABV.

Designed by the Owners Group 5th Edition; it features nearly a ton of domestically sourced black currants, raspberries and strawberries with some locally sourced polyflora honey from right here in Sarasota. Then aged on heavily charred American Oak before spending nearly two additional years in a freshly emptied Wild Turkey “Rare Breed” barrel. Back in September we gave the Owners Group 7th Edition a chance to leave their mark on this mead. A little 5th Edition and 7th Edition collaboration. A Cobbler treatment with gluten-free graham and Amburana was the winner. The aromatics are of dark fruit, cobbler crust and that distinctive Amburana note. Some delicate florals and woody character. The color is dark crimson red bordering on black. Optically superb clarity. Long sheeting legs. On the palate I get bold red fruit with some vanillins and woody character. The Graham is pronounced as is the Amburana. Great complexity and a full enveloping finish.

2023 Barrel Aged Peach Brandy 1+1+1+1=5

With it is Peach Brandy Barrel Aged 1+1+1+1=5. Fresh off a victory at the Mazer Cup! I felt like this mead was vastly under appreciated when it was released. It felt really good to see the Judges respond well to it in the biggest competition in the world. Incidentally; it dropped with Mimir which also medaled at the competition. This mead is a case study in Stone Fruits. That is a broad family of fruits with a stone or a pit inside. For this medley we used some banging organic honey by way of Brazil. We’ve added red plums from Chile, apricots from Turkey, yellow peaches from Georgia, dark sweet cherries from Michigan and tart cherries from Wisconsin. We fermented this one with a blend of yeasts used for high intensity Shiraz and Pinotage. Then gently aged it on a bit of oak. Lovely burnt auburn red color with optically perfect clarity. It has great legs and moves beautifully in the glass. On the nose I get thr essence of fresh Peaches. Likely from the Brandy barrel. I also get loads apricots and cherries. I even get some peach skins. On the palate I get bright peaches, cherries, plum, raspberries and some florals. Some woody character similar to what I’d expect from a bourbon barrel; but, it’s all peach brandy after that. Some micro-oxidation has eased that sharpness and acidity in the non-BA version. I really like this mead. I think you will too

Barrel Aged Peanut Butter Banana French Toast Plus aka BAPBBFT+ features organic honey, bananas and peanuts with the addition of Grade A Maple Syrup from at Morse Farm in Vermont plus Saigon cinnamon. We then aged it in a Willett Rye Whiskey barrel with a bit of Brazilian Amburana for good measure. PBBFT remains amongst our most popular concepts and has some sentimental significance to me. It was sort of the product that laid down the foundation for what became the Waffles series. In a real way; it felt like a meaningful step forward in our mead making.

When we designed Cranburana we decided we’d go full bore with tons of cranberries. Introduced gradually to keep the fermentation healthy. We’d then add some Brazilian Amburana for some spice and depth. I decided to play off the woody vanillin’s by doing a marshmallow treatment. We added a pile of vanilla and marshmallow flavor to the base. The nose is marshmallow cream juxtaposed against red fruit. The flavor follows suit with a savory pillowy finish. Aged in a Bourbon Barrel for 12 months

Colada Vibes features a blend of Passionfruit, Kent Mangoes, Nectarines, Pineapple and Calamansi (a member of the citrus family endemic to the Phillipines), with raw coconut flakes. We chose raw instead of toasted flakes as we wanted to emulate the coconut crème vibe you get in a pina colada while avoiding that sun tan lotion flavor. Then aged for a year in a freshly emptied Wild Turkey Rye Whiskey barrel.. I think we threaded the needle pretty well here.

The mead has spent more than a year there. The mead is lovely dark red hue. Dense and really grips the glass. Polished to optical perfection. The nose is bold red fruit with that apple brandy showing. I get a bit of Apple Jolly Rancher aromas. I also get some raspberry candy too. So the name is fitting. Flavors are a wonderful melange of fruity character. Obviously; with nine distinct fruits it’s impossible to pull them all separately. I get some fruit punch vibes, berry skins, and candy and floral vibes mingling with some vinous character from the oak. The barrel shows up on the finish.

Is a riff on the classic Moscow Mule cocktail. We’ve used Lychee, Yuzu for that citrusy character and of course some genuine ginger. We then aged it in our privately selected New Riff Bourbon barrel. The barrel has dialed the ginger back a bit; but, added some tannins to give it some structure and an off-dry finish. .

What you have here is basically a treatment of the most recent batch of Susy’s. Finished on gluten free graham crackers and Brazilian Amburana wood. Amburana really throws off notes of cinnamon and baking spice so we opted to roll the dice and use it instead of a conventional cinnamon addition to get that distinctive cobbler crust vibe. Graham and spice on the nose. Deep burgundy in color. Big flavors of cherry transitions to baking spice then finishing with the graham. The flavors definitely seem to pop more warm; so do be afraid to drink this one with only a slight chill.

Company Cobbler features Blackberries from Europe, Raspberries from Mexico and Wild Blueberries from Canada combined with organic Brazilian Quince honey. Then finished on gluten free graham crackers and Brazilian Amburana staves. We kept it wild with a mix of Saccharomyces and non-Sacc strains. The mead then spent greater than a year in the privately selected New Riff Bourbon barrel we selected in 20’. It emerges with a more dark fruity character, elements of cherry, a bit of micro oxidation and wonderfully rounded. Dangerously drinkable for its 15% ABV.

First up is a new concept called Blood Moon. The label features a group of photos of May’s rare super moon lunar eclipse snapped by my neighbor back in May. The mead was fermented during this rare astronomical phenomenon. As the name implies, this one is a deep scarlet red. We used some exquisite Mexican Orange Blossom Honey. To it we added the juice of over 1,000lbs of Black Plums by way of Brazil. Then topped with an absurd amount of Grade A Fancy Strawberries and Blackberries from here in the States.

Stocked up is an homage to a pretty famous recipe published by the American Homebrew Association from Award Winning Homebrewer Curt Stock. Curt’s Super Berry melomel (Black Currant, Raspberry, Blueberry, Blackberry and Strawberry) is marketed by several Meaderies nowadays. It’s been made by or served as a template for just about every amateur competitive Meadmaker. For this tribute we decided to synthesize his recipe with the Garagiste methodology. We used greater than twice the amount of fruit per gallon, aged on bit of wood and kept it wild with a mixed culture fermentation. It is positively massive. Perhaps the single most voluminous mead we have ever made. I’m sure you will enjoy it.

2020 Bilberry Frangipane

Bilberry Frangipane is modeled after a dessert torte. Imported Brazilian Quince honey again this time paired with an enormous amount of imported European Bilberries. After fermentation wrapped up we aged the mead for an extended time on toasted sweet almonds. Dark as night. The sweet almond pastry aromas very apparent upon opening the bottle. The bilberries present very similar to blueberries; but, with an almost vinous note from the skins. Some tannins and a hint of astringency makes for a deep and complex flavor which is bookended by a big almond finish.
