Our first Methode Champenoise, this delicate wine is only available in extremely limited quantity. Only 36 cases made. The 2016 Blanc de Blanc, or “white from whites” was made in the traditional methode champenoise style from 100% estate grown Chardonnay grapes. The secondary fermentation began en tirage in May of 2017 and the wine has rested on the yeasts for 2 ½ years. Recently disgorged of the yeast and dosaged with .9% RS. This Blanc de Blanc is classic in nature with yeasty notes of rich Brioche on the nose with a well balanced natural acidity along with a distinct minerality. This combination allows for aging as well as a wide range of pairings be it everything from shellfish to strongly aged cheeses, or as a glass of bubbly on its own
