Honey Source: Claredon, NY. Home to our beekeepers' Jason and Jake. This honey is nothing short of amazing and the boys have the scars to prove it. Some bees are tough and some bees are nasty. The nasty bees produce more honey, but they sting hard.
This mead showcases the flavors, aromas, and terroir of an exceptional honey transformed into a semi-sweet traditional mead. In creating the meads we want each honey to speak for itself, without fruit, spices, or oak to share the stage.
This is the truest form of Mead.
The bees gather nectar from every flower growing in a specific area during a seasons bloom, and then turn it into a unique honey. This local honey was kept raw, and just like our meads, never heated or filtered in order to preserve the pollen and delicate enzymes...from flower...to bee...to bottle.
This honey is so unique and special that we had to honor it by making a semi-sweet traditional mead out of it so that we could share it with the world. This mead truly captures the upstate NY's terroir, encapsulating all that bloomed within a few miles of the hives during the spring season of 2022.
