We have a few American Persimmon trees that grow wild on our property. For this cider we added persimmon skins, which are very astringent, and some of the ripe flesh. We also added locally sourced Red Heart plums. We aged the cider in bourbon barrels for 7 months. The plum and persimmon notes are subtle, with summer fruit on the nose and a slight tannic finish. This bright cider that pairs well with goat and sheep milk cheeses, and dried fruits.
