Three Russets, part of our Apple Tree Series, is a hand-crafted dry cider made with 100% Golden Russet heirloom apples from Smith Brothers Farm in New York.
Three old Golden Russet trees stand guard together on the edge of our orchards - survivors from an era that ended when cosmetic, culinary apples became king of the orchards. But the Golden Russet makes up for its drab appearance by packing incredible flavor into one apple. One of the sweetest and well-balanced apples, Golden Russet makes a strong, bold, and delicious cider.
Three Russets does not disappoint. Sip this cider like a fine white wine and enjoy the incredible diversity of our orchards.
Orchard Blend No. 13 is a blend of European varietals and Golden Russet. For the first time we feature “Ashmead’s Kernel” up front and center in this complex cider. Ashmead’s, also a russet, is an English variety that was brought over by the colonists and it has thrived in the New World ever since. Ashmead’s distinctive flavor pairs well with the grapefruit tones of the Golden Russet.
Bliss out with this unique blend of culinary apples, steeped with lavender from the Texas Hill Country and balanced with local Texas honey. Soft floral notes on the nose and a warm honey richness run through this refreshing cider.
Strawberry Basil is a complex, light, and crushable cider well suited for the arrival of Spring. As with all our Frescas, the apples take center stage with strawberry and basil providing the subtle, yet perfect back up.
Our Cider Fresca series features apple ciders infused with other fruits or herbs. Always interesting - always refreshing.
Orchard Blend #11 is made with estate-grown bittersweet and Golden Russet apples. The English Chisel Jersey in the blend provides astringency while the American Golden Russet adds hints of citrus and grapefruit. The Golden Russet is an old heirloom apple that is high in sugar and acidity - it is a wonderful cider maker's apple. We have recently planted many rows of this varietal at Smith Brothers Farm in New York and we hope to feature it prominently in future ciders.
This cider maker's cider is a blend of New York heirloom Northern Spy, Acey Mac and bittersweet Yarlington Mill, and bittersharp Porter's Perfection. This is a true American-European cider hybrid; we are biased but we think that these blends make some of the best ciders in the world.
Mr. Green is a well-balanced single varietal cider that is deliciously tart. Made from Rhode Island Greenings, this refreshing cider drinks more like a coastal Italian white wine with wonderful minerality and complexity.
Similar to its canned cousin, this bottle-conditioned cider is wonderfully effervescent and refreshing. The Greening is a well-known American heirloom apple that dates back to the 17th century - making it one of the oldest cultivated varieties in the world.
Inspired by traditional ciders made in Asturia, Spain, Espía is a 100% Northern Spy cider.
This cider was mellowed on oak, filtered, and then carbonated to create a clear and bold cider. While a slight departure from the traditional sidras from Northern Spain, this crafty cider can still be enjoyed from the long pour of a porrón.
Silver Tip, part of our Apple Tree Series, is a hand-crafted semi-dry cider. Made with a blend of tree-ripened, heritage and culinary apples, Silver Tip is a refreshing and complex cider that pairs well with any occasion. As the apple tree awakens from its winter slumber, the fruit bud separates at the tip, exposing silver tissue. It is only a matter of months before the Silver Tip becomes an apple that we press and craft into this refreshing cider.
Cherry Red, part of our Cider Fresca Series, is a hand-crafted semi-dry cider infused with Montmorency cherries grown on the coast of Lake Ontario. Made with a carefully selected blend of Great Lakes heritage and culinary apples, the subtle hint of cherry reminds us of the early days of summer along the lake.
Mr. Green, part of our Apple Tree Series, is a uniquely bright, dry and well-balanced single varietal cider that is deliciously tart. Made from Rhode Island Greenings, this refreshing cider drinks more like a coastal Italian white wine with wonderful minerality and complexity. The Greening is a well-known American heirloom apple that dates back to the 17th century - making it one of the oldest cultivated varieties in the world.
The best of both worlds - this cider is a blend of old world and new world apples grown on the Smith Brother's Farm. We blended Porter's Perfection bittersharps for their crisp acid, Brown Snout bittersweets for their complex tannins, and Golden Delicious apples for their juicy sweetness. This is the very definition of a classic American cider.
Estate fruit produces this crisp and complex cider. Block 19 at Smith Brother's Farms is a recently-planted grove of bittersweet and bittersharp European varietals. Each year at harvest we pick what the block produces and the entire lot is blended to produce what we like to call a true cider maker's cider. We are excited to watch the trees grow and mature; we never know exactly what we are going to get from Block 19 but we know that it is going to be great.
